Shallots you do not intend to use immediately right after harvesting should be stored properly. Store only those bulbs that are firm and free from any bruises. Gently brush off any soil cleaving to the bulbs and let it “cure” in a warm, dry place for seven days. Alternatively, you can braid the tops and hang them to dry. You may then place the shallots in a mesh bag and store in a cool, dry , well-ventilated area. Shallots that are properly stored can be kept up to approximately eight months.

Replanting the Shallots
One very good thing about shallot plants is you only need to purchase your set or sets once. Dig the shallot bulbs and separate them into single starter bulbs. Wait until most of the shallot tops are yellow and toppling over before you pull up the plants to separate the bulbs. Replant in the fall with the same procedures as above. You can also cover them with straw while they are in the dormant state and allow them to freeze in the ground. Come spring time, remove all the straw and let the shallots grow.
